Hi!
Hope you all are not snowed under like we are here in Virginia AGAIN!!! This time we have about 9 inches of snow....I already have Cabin Fever and it has just been ONE DAY!!!! Yuk....My husband has been cleaning our driveway half the day...I worry about him when he is out in this cold weather. It is 17 degrees outside right now! burrrrrrr...we went out for a little while to get something to eat and there was hardly anyone out much less any place open! Can't say I blame them! We must be nuts! My daughter called while we were out and said we were crazy!! I have to agree with her!! hehe... I know it isn't as bad as a lot of states have it but we aren't used to this here and we just got over almost 20 inches a couple of weeks ago. Needless to say, everyone around had been kissing the ground a lot!! The grass looks sooooo nice, at least while we could see it. Our little dogs were sooo glad to see the ground and then there came the snow again! Oh well, enough about that! It is late and I am tired and rambling! I hope you all are having a great beginning of the year and starting lots of projects!! I have just begun RUG HOOKING and I am sooo excited! I love it! I have made a small rug, a pillow and a santa claus now in the last few weeks. I will take pictures and put on the blog! Just so I can brag!! hehe I love the wool and all the patterns....probably will be selling some in the near future on Ebay! Keep a look out. I have a few Rug Hooking books on there now. Hi!
Well, I hope you all had a wonderful New Year and a safe one too!!! Time is flying by isn't it....let's make the most of this year by spending more time with our families, talking more with loved ones and doing things that really count!!! I spent time this Christmas with one of my Granddaughters making Christmas cookies and her helping me around the house several days ---she is 7 years old and that is a time that I will NEVER forget and I hope she won't either! When I look into my grandchildrens eyes and they ask me questions....right now my 7 year old is constantly asking me to tell her a "funny" story about my past and I will have to rack my brain to think of something funny and we will laugh and laugh about something that was just really, well, you know, girl stuff silly! But she loves it and these are the things I want MORE and MORE of this year!!! I know we all need Money, we need food and clothing and a home and thank the Lord for them all but we need our families!! We are blessed!!!!!! Look around and all that is happening all over the world and KNOW that YOU are blessed right where you are TODAY!!! I just thank the Lord for giving me my children and my husband and my grandchildren and keeping them safe!!! Thank you Lord for your Mercy....

Happy Holidays!!
It has been a while!!! Sorry.....we have been busy and I know you have too! With the Holidays and shopping and families, what else can I say!! Hope you are through with your shopping by now....I just about am, just a few more items to get and......then I can rest, yeh right! Then starts the cooking and cleaning for Christmas Day!!! Yeah!!!!! I remember growing up that my Mom used to make Pecan Pies at Christmas....her favorite things to make were desserts and she could make the best in the world!! At least we all believed she could...hers were delicious! She lived to be 93 years young! I miss her so!!!!!! She taught be right from wrong and all about the Lord....I owe soooo much to her and my Dad. He passed away when I was only 26.

Here is her own Pecan Pie Recipe.....try it...you will like it....

1 1/4 cups sugar

3 eggs-beaten

1/2 cup dark corn syrup

1/4 cup butter- melted (or margarine)

1 cup Pecans (halves or broken)

dash of salt

1 - 9 inch unbaked pastry shell

Directions:

Preheat oven to 350 degrees

beat eggs thoroughly with sugar, corn syrup and melted butter.

Add a dash of salt and pecans and stir in

Pour into Pastry shell

Place in oven and bake for 45 to 50 minutes or until the knife inserted in pie comes out clean.....

I have been baking this pie since 1972 and it is delicious!

Hi Everyone...
I know some of you that probably read this blog are not from the STATES but Happy Thanksgiving everyone!!! Here is a wonderful Pumpkin Cake recipe that I think your family will really like! It is soooooooooooooooooo easy to make...just throw everything in the mixer together...anyway, here goes for the instructions! I promise it is good......

PUMPKIN CAKE:
4 eggs 2 Tsp. Baking Soda
2 Cups Sugar 2 Tsp. Cinnamon
1 Cup Oil 1/2 Tsp.Salt
2 Cups All Purpose Flour
2 Cups Canned Pumpkin (plain, not the seasoned pumpkin- it is a 15 oz. can so use that)
Mix all ingredients with the mixer, no order necessary. Pour into greased Bundt pan or tube pan. Bake at 350 degrees for about 55 minutes. Let cool a minute or two and the pour out onto serving platter. Let cool completely before icing.
ICING:
1/2 Stick Butter
1 Box confectioner Sugar
8 oz. Cream Cheese
2 Tsp. Vanilla Flavoring
Let cream cheese and butter soften to room temperature and mix with mixer- then add confectioner sugar and vanilla. (You can keep this cake in a covered cake keeper on the counter for 2 or 3 days with refrigeration - if it lasts that long) ENJOY!!!!!!
