Happy Holidays!!
It has been a while!!! Sorry.....we have been busy and I know you have too! With the Holidays and shopping and families, what else can I say!! Hope you are through with your shopping by now....I just about am, just a few more items to get and......then I can rest, yeh right! Then starts the cooking and cleaning for Christmas Day!!! Yeah!!!!! I remember growing up that my Mom used to make Pecan Pies at Christmas....her favorite things to make were desserts and she could make the best in the world!! At least we all believed she could...hers were delicious! She lived to be 93 years young! I miss her so!!!!!! She taught be right from wrong and all about the Lord....I owe soooo much to her and my Dad. He passed away when I was only 26.

Here is her own Pecan Pie Recipe.....try it...you will like it....

1 1/4 cups sugar

3 eggs-beaten

1/2 cup dark corn syrup

1/4 cup butter- melted (or margarine)

1 cup Pecans (halves or broken)

dash of salt

1 - 9 inch unbaked pastry shell

Directions:

Preheat oven to 350 degrees

beat eggs thoroughly with sugar, corn syrup and melted butter.

Add a dash of salt and pecans and stir in

Pour into Pastry shell

Place in oven and bake for 45 to 50 minutes or until the knife inserted in pie comes out clean.....

I have been baking this pie since 1972 and it is delicious!
